Special Edition sparkling wines Shabo are created from Shabo's own terroir grapes. The vines were purchased in Europe, taking into account the characteristics of the Chabot soils and planted in the best areas of the terroir. Quality control is carried out by experts from SARL Derenoncourt (France) and Institut Oenologique De Champagne (France, Champagne).
Sparkling wine was created in the modern "House of Sparkling Wines Shabo ", the equipment of which is one of the best in Europe. The Charmat Lungo technology, like the classic method of champagne in a bottle, provides for natural secondary fermentation, only the role of the bottle is performed by closed containers - acratophores of the new generation. Secondary fermentation takes place from 2 to 4 months. Additional aging for at least 6 months on fine yeast lees (sur lie method) gives sparkling wines a special elegance. The technology involves the use of expedition liqueur of the highest quality in quantities corresponding to the level of sweetness of the sparkling wine.
Shabo is a Ukrainian modern winemaking enterprise with a full production cycle, founded in 2003 in the village of Shabo on the basis of the oldest winery in Ukraine. The structure of the company Shabo includes “Wine House Shabo ”, “House of Sparkling Wines Shabo ”, as well as “Cognac House Shabo b>".

Shabo is a unique terroir of Ukraine, 1200 hectares of vineyards, 4 million vines, most of which are European varieties from the best nurseries in Europe (Cabernet Sauvignon, Cabernet Franc , Merlot, Muscat Ottonel, Pinot Gris, Pinot Noir, Rhine Riesling, Sauvignon Blanc, Syrah, Pink Traminer, Chardonnay, etc.). Today, these vines are more than 15 years old, they are at an optimal age for creating high-quality wines. The subject of special pride is the autochthonous grape variety Telti Kuruk, the vines are more than 40 years old.

Shabo is the only company in Ukraine that has received the right to create premium wines KNP (“Controlled Designation of Origin”) - the Ukrainian analogue of the French Appellation d'origine controlee.
