Over the course of four centuries, through the efforts of many generations of winemakers, the unique style of Gosse champagne was formed - a balance between beauty, strength and sophistication. Today Gosse is the oldest wine house in Ai. In 1584, Pierre Gosset, a member of the city council of Ay and a winemaker, began producing still, mostly red, wines from grapes grown in his own vineyards. The reputation of Ay's wines was so high that King François I had his own vineyard here, now owned by the Gosse Champagne House.

Currently, the owner of the Gosse Champagne House is the Cointreau family. All prestigious Gosse cuvées are produced in an antique bottle, an exact copy of a champagne bottle from the 17th–18th centuries. The average echelle des crus rating for all grape varieties used to produce Gossay champagne is 95%, one of the best in Champagne. The first fermentation takes place in oak bottles. During the production of Gosse champagne, the aroma of champagne retains the natural fruity tones. Following ancient traditions, the entire production process of Gosse champagne takes place using only manual labor.
