Application: :

A fermentation tube filled with water is used during the fermentation process to protect the wort from oxygenation, while at the same time allowing the carbon dioxide generated during the fermentation process to escape regularly.

Thanks to the moving column of water, we can observe the changing intensity of the fermentation process from the stormy (intense gurgling) stage to the stable one. Evaporation of water is a natural phenomenon, so remember to add water to the level in the tube. Failure to do so may result in too much oxygenation of the liquid, resulting in the oxidation of ethanol to acetic acid. This unfavorable process can also be caused by fruit flies that enter the vessel.

ATTENTION: in case of limited ability to control the water level in the tube, we can fill it with a less intensely evaporating oily liquid.
