More recently, a micro-distillery was created on the Mont-Saint-Jean farm. Filled with history, character and authenticity, this place is now rediscovering the traditions of yesteryear by distilling high quality gin and whiskey. At that time, there was already a distillery on the site, as it was an efficient way to convert expired beer. Waterloo beer is the base ingredient of both gin and Waterloo whiskey. The only difference is that the whiskey distillate is not changed at all, and different spices and botanicals are added during the production process to improve the taste of the gin.
